We made a whole turkey and all the accouterments for Thanksgiving at our house, which happened to be dinner for two. So, we have a lot of leftovers. And, as much as I lurve Thanksgiving dinner, there is a limit to how many times one can eat it.
So, tonight I threw together some leftover turkey in a tetrazzini-esque-but-not-really way. It was delish.
Ingredients:
Splash of olive oil
1/2 an onion
2 stalks celery
8 baby carrots
2 cloves garlic
2 Tbs flour
1/2 cup white wine
1 cup chicken stock
Splash of heavy cream
1 tsp tarragon
Leftover spinach
Leftover turkey
Cooked Egg Noodles
Saute onions, celery, carrot and garlic until tender. Add flour and stir for 30 seconds or so. Add white wine, stock, cream and tarragon. Bring to a simmer. Add spinach and turkey. Cook to desired sauciness. Serve over warm egg noodles.
Yum!
We enjoyed this dinner with a bottle of Erath, 2007 Pinto Noir from Oregon. I am in love with Oregon pinots and this one is no exception. It’s clean and bright with just a hint of strawberries and sunshine. Delish.
